José Medina Camacho was born in Michoacán, the place the monarch butterflies return to every year, known for bold food and deep tradition. He owns Adios in Birmingham, a tequila bar Food & Wine called one of the top 15 in the country and wrote, "by Mexico City standards, this is a great bar.” He's a 2025 James Beard Award finalist.
